Baking Fun

 

 

With my daughter’s 21st birthday party less than 3 days away I thought that it might be a good idea to start working on the cake. After all, it is going to be a 2 tiered monster, just because I feel that a 21st birthday is something special, and because I have something to prove to myself. Tie into the equation the fact that our furnace went out yesterday and it is still a tad bit chilly in the house. That is another story all on it’s own and I’m sure you will hear the whining about that later, but for now it is time for some fun! What better way is there to add some heat and of course glorious scents at the same time….bake, bake and bake. See my previous post for the Whacky cake recipe. Another cake being made for the party is a peanut butter and jelly cake. I have included this recipe as well.

Basic White Cake

Ingredients:

1 cup granulated sugar

½ cup butter

2 eggs

2 teaspoons vanilla

1 ½ cups flour

1 ¾ teaspoon baking powder

1 cup milk

Directions:

Preheat oven to 350 degrees and spray pan with cooking spray

Cream together sugar and butter, beat in eggs one at a time and stir in the vanilla. In a separate bowl mix the flour and baking powder. Gradually add the dry mixture to the creamed mixture. Stir in the milk and mix until the batter is smooth. Bake for 30 to 40 minutes or until tooth pick comes out clean. Let cake cool completely. Since I’m decorating the cakes, I put them in the freezer, to make it easier to decorate.

Cream together the peanut butter, butter, and sugar until the mixture is light and fluffy, add eggs-one at a time and beat after adding each, beat in the vanilla. In a separate bowl combine the flour, baking powder, and salt. Gradually add the dry mixture to the creamed mixture, while alternating milk into the mix. Beat very well after each addition, and pour into cake pan. Bake for 30 to 40 minutes, or until tooth pick inserted comes out clean. Allow to cool completely.batter of pb & j cake

Peanut Butter & Jelly Frosting

Ingredients:

¼ cup softened butter

½ cup, plus 1 tablespoon peanut butter

1 ¾ tablespoons vanilla

3 cups confectioner’s sugar

6 tablespoons milk

¾ cup grape jelly

Directions:

Beat butter and peanut butter until smooth, add vanilla and gradually add confectioners sugar and milk until the icing is the consistency that you desire. Spread grape jelly on the cake and then frost the cake.
