Whacky Cake from the Whacky Woman

My project for tonight took me into the kitchen and it is one that my hips are not going to thank me for.  I have been on this kick lately to try to fix as many of our foods as possible from scratch. The convenience and cost of pre made foods are getting ridiculous! I ran across this recipe for a chocolate cake and couldn’t wait to try it out! Here is the recipe, oh and for the girls I work with….Forget the Diets tomorrow, because I made a cake for work too.


1 1/2 cups all purpose flour
1 cup sugar
1/4 cup cocoa
1/2 teaspoon salt
1 tsp. baking soda
1 teaspoon vanilla
1 tablespoon white vinegar
1/3 cup vegetable oil
1 cup cold milk


Preheat oven to 350°F., spray the baking pan with cooking spray. Now for the fun part, measure the flour, sugar, cocoa and salt and baking soda into the pan. Using a fork,  stir all ingredients until no streaks remain and everything is well combined. Do this right in your baking pan. There is no need for a mixing bowl. Make little hills with the dry ingredients, and put 3 holes in the hills.

Add the vegetable oil to the first hole, the vinegar in the second hole, and the vanilla in the third hole.

 Pour the milk over the entire mixture and whisk with the fork until well blended. Don’t forget the edges and sides.

Bake 35-40 minutes.

Hot out of the oven

Cool, Add whipped cream or philadelphia cream cheese icing.

Philadelphia Cream Cheese Icing

1-8 ounce package cream cheese, softened
1/4 cup  (1/2 stick) butter or margarine, softened
1 tsp. vanilla
 3 1/2 cups powdered sugar
Beat cream cheese, butter, and vanilla together with a mixer, gradually add in the powdered sugar. Beat until smooth. Frost and enjoy!!!
